Pig Wizard?
One of our most popular Flatbreads, as new as they are, is the Pig Wizard. Odd name, but there is a story behind the name.
Local butcher extraordinaire, Jonathon Rovetto, is the Pig Wizard! He is one of the most talented local sausage makers. In addition to a variety of sausages, he also crafts bacon and various other dry-cured meats. His products are all natural, with no preservatives, no nitrates/nitrites, no hormones or antibiotics. He buys his pigs from his neighbor, who raises them here locally. His products can be found at the Downtown Monterey Tuesday Farmer's market. Jonathon won the best recipe at the Big Sur Chanterelle Festival last year: a competition with the most talented chefs on the Monterey Peninsula.
Chef Dory Ford of Aqua Terra Culinary is utilizing The Pig Wizard Sicilian Fennel sausage on this delicious Flatbread, along with Roasted peppers, locally foraged mushrooms, and Toma cheese. Toma is one of the most famous cows' milk Italian cheeses. Its name is derived from the process of cheese making. 'Toma' actually means 'cheese made by the farmer himself'! It is incredible when married with all the ingredients and fired in our 600 degree stone deck oven. You will not be disappointed!
