Flavors of white peach and lychee with notes of honeydew melon and very soft slate make this the perfect "day drinking" wine.
The CRU “UNOAKED” Chardonnay from Monterey is comprised from two vineyards in the Arroyo Seco Appellation. Both the Marks and Cobblestone vineyards are located to the west of Highway 101 near the town of Greenfield. The vineyards receive daily coastal influence which makes their locations ideal for making great Chardonnay. The Marks Vineyard sits on decomposed granite and shale soil. This helps keep the vines in a balanced nutritional mode while maintaining vigor. A balanced vine lends itself to producing a better flavor profile. The Cobblestone Vineyard, rightfully named since the rows are lined with cobblestones, sits a couple of miles south of Marks. This vineyard is a favorite of Ken’s when determining pick times. The flavors of this fruit tend to be like no other resembling biting into pineapple, mango and green apple all at once.
The fruit for the 2016 CRU Unoaked Chardonnay comes from two vineyards, located near Greenfield in the Arroyo Seco Appellation. The Marks vineyard is comprised of Chardonnay Clone CH76 on 101-114 rootstock. The Cobblestone vineyards utilizes Chardonnay Clone CH809 on 5B rootstock. The fruit was hand picked and transported to Madera in a refrigerated truck in order to maintain soundness of the fruit. Both lots were whole cluster pressed to a settling tank for 24 hours. The juice was then racked of the solids and inoculated with CY3079 yeast. Both lots were put through a slow cold fermentation to preserve and trap the floral attributes of the fruit. Fermentation temps were at 50 degrees for 18 days to dryness..
